Amazing garlic shrimp scampi! Yes, you can enjoy the flavor of garlic on the Low FODMAP Diet.

Ingredients

2 lbs Raw Shrimp

1 Cup Unsalted Butter
-
1 Tbsp Dijon Mustard (make sure it is Low FODMAP)

1 Tbsp Fresh Lemon Juice
-
1 Tbsp Parsley
-
1 Tbsp Essence of Garlic Salt

12 oz Gluten Free Pasta
Directions
Preheat oven to 450 degrees.
Cook pasta according to directions. We like to use Barilla Linguine pasta. Cook it until al dente so the pasta doesn't get mushy.
In medium sized oven safe pot melt butter over medium heat. Add in mustard, lemon juice, garlic salt, and parsley.
Cook until butter is melted and then remove from heat and add the shrimp. (we prefer raw shrimp peeled and deveined with the tails removed)
Bake shrimp in the oven 12 - 15 minutes until pink.
Take the shrimp out of the oven, add the pasta and mix thoroughly. Enjoy!
