I just love Chicken Cordon Bleu, Triple S sprinkled inside on the chicken and then a liberal coat of Sweet Maple Dust on the outside of the bacon wrapping. This recipe is so good, we cook them in the smoker but they could be cooked in the oven without losing much in the final product. We use Chicken Breasts, Honey Ham, Provolone Cheese(our family doesn't like Swiss Cheese), cheap bacon(works best for wrapping) and season with Sweet Maple Dust

Ingredients
-
4 large chicken breasts
-
12-16 slices of deli ham of your choice
-
12 slices of Cheese(traditional is Swiss, we prefer Provolone)
-
1 pound of thinly sliced bacon(the cheap bacon seems to work best)
-
Triple S to taste
-
Sweet Maple Dust to taste
Directions
Butterfly cut the chicken breasts to make them thinner and pound with a meat hammer to get uniform thickness
Sprinkle Triple S on the inside of the chicken breast to give a burst of flavor.
Put three slices of cheese on the chicken breast followed by three to four slices of ham.
Roll up chicken breast on itself and tuck the open ends down to contain the cheese as it melts.
Wrap the rolled chicken breast up with 4-5 slices of bacon making sure to cover the entire breast if possible. Stretching the bacon a bit seems to work best.
Season all sides of the bacon wrapped breasts with a liberal coating of Sweet Maple Dust to taste.
Place in oven at 350 and bake for 45 minutes. Check internal temp, when it is 165 degrees F internal temp. May need additional time depending on the size. These can also be cooked in a smoker, 325 degrees F for an hour or until 165 degrees F internal temp.
