These Salmon & Potato Cakes with Chive Mayo are crispy on the outside, tender on the inside, and packed with flavor! Pan-fried to golden perfection and served with a creamy, tangy chive mayo for the perfect finishing touch. A delicious and gut-friendly meal!

Ingredients

1 Cup plain mashed russet potatoes (plain boiled potatoes mashed up roughly)

1 Cup finley chopped salmon (fresh or canned)

½ Egg beatem

1/8 Cup mayonaise

½ Tbsp SnS Ketchup

1/8 tsp Essence of Garlic Salt

1 Tbsp chopped chives

Panko breakcrumbs - *You can use a low FODMAP Breadcrumb or regular panko. (Regular Panko has a serving size - just make sure the panko ingredients don’t contain any high FODMAP ingredients like milk powder or garlic/onion.)

3 Tbsp Low FODMAP Flour
Directions
Iin a bowl put the mashed potatoes and chopped salmon
In a separate bolw mix: egg, mayo, ketchup, Essence of Garlic Salt, and chopped chives
Pour the liquid mixture into the bowl with the potato & salmon. Gently mix it up. You do not want a smooth combined texture, you want bits of salmon & potato still separate.
Form the salmon/potato mixture into 4 patties.
Put them in the fridge while you prepare the remaining ingredients. Helps them firm up and hold their shape better for the next step. You could make these ahead of time and leave them like this in the fridge until ready to cook.
On 2 separate plates panko breadcrumbs with pepper, rest of unused beaten egg
In a small bowl put 3 Tbsp flour
Take salmon patties from fridge. Sprinkle the tops with some flour and spread the flour out on full surface of patty.
Dip the floured side of patties into the egg and then into the panko forming an outer crust
Flip the patties and repeat on the other side.
Heat your oil in a shallow frying pan on medium heat. When the oil is hot add your patties. Fry until golden brown approximately 3-4 minutes and then flip them over and fry on other side 3-4 minutes.
Mayo on the side is a mixture of mayo, chives, lemon juice, and salt
