Ingredients
Meatballs
-
1 lb ground beef
-
1/4 cup panko breadcrumbs or 2 slices of white bread torn into small pieces
-
1/4 cup lactose free milk
-
1/4 tsp Smoke n Sanity Essence of Garlic
-
1/4 tsp SnS Essence of Onion
-
1 beaten egg
-
Pepper to taste
Sauce
-
1/2 cup Smoke ‘n Sanity Ketchup
-
1/2 cup low FODMAP Beef Broth
-
1/4 cup water
-
1/4 cup canned pineapple juice from canned pineapple chunks***(see note at bottom)

1/4 cup brown sugar
-
1 TBSP White Vinegar
-
1 TBSP Soy Sauce
-
1/4 tsp SnS Essence of Garlic
Extras
-
Thinly sliced carrots
-
Thinly sliced peppers (green peppers have different FODMAPS than Red, Orange and Yellow so use a mixture. Keep to serving sizes)

1 cup canned pineapple chunks***
-
Long slices of Green Onion Greens cut on diagonal
-
2 tsp cornstarch whisked into 1 TBSP cold water*
Directions
Gently mix meatball ingredients in a bowl. Form your meatballs. They can be bigger ones or smaller ones. Do not pack your meatballs tight so they remain tender.
Place the meatballs on a foil lined cookie sheet.
Bake for 10 - 20 minutes. This will fully be based on the size you make your meatballs. If you are unsure of doneness just split on open and check the center.
While your meatballs bake whisk all sauce ingredients into a small bowl.
Use a frying pan and heat a small amount of oil.
Sauté your carrots until softened. Then add in your sliced peppers and sauté a minute.
Pour the bowl of sauce ingredients into the frying pan and bring to a simmer.
Once simmering add your cornstarch slurry and whisk. Let this simmer for a minute.
Lastly add your Pineapple Chunks and Cooked Meatballs. Warm through. Add the Green Onion pieces to the top of your meatballs.
Serve with your choice of sides.
Recipe Note
***Be sure your canned Pineapple is in juice.It has a larger serving size.
***Pineapple juice doesn’t have a tested amount.But in this recipe you are only having 1/4 cup of canned pineapple per serving.The serving size is up to 1/2 cup.The pineapple juice added is only 1 TBSP per serving.This should fall under the low FODMAP serving size.
