This Cheese Sauce Queso is rich, creamy, and packed with flavor! It's the perfect dip for chips, nachos, or drizzling over your favorite dishes. Smooth, cheesy, and absolutely delicious!

Ingredients

1 Tbsp Butter

1 Tbsp Flour (gluten free or regular)

½ Cup Lactose Free Milk

4 ounces of shredded cheese (don’e use packeage pre-grated if you can help it, see notes below)

Smoke n Sanity Salsa (mild or mediume)
Directions
Melt butter in a small pot on medium heat.
Whisk in the flour and cook, whisking constantly, for approximately 1-2 minutes. This is to cook off the rawness of the flour.
Slowly whisk in your milk.
Once the milk has been fully whisked in and no lumps remain, bring the mixture to a simmer for a minute or so stirring on occasion.
Then take it off the heat fully and add your grated cheese(s) in three separate bunches whisking fully between each addition.
Removing it from the heat helps keep the cheese sauce from becoming grainy.
This is a basic cheese sauce. But we want Queso…….Stir in the amount of Salsa you want. It’s a good idea to know how much salsa you use so you can figure out how much Queso you can have. Max serving size for the salsa is 3 TBSP.
If you like it spicier you can add some chopped pickled jalapeños or hot sauce.
Recipe Note
**don’t use packaged pre-grated cheese if you can help it.Pre-grated cheese has an additive to keep it from clumping together in the bag.This can make it not melt great in your sauce.
*use all cheddar or switch it up and use various cheese. Shown was Cheddar and Gruyere.
