Loaded baked potato salad features tender potatoes tossed in a creamy dressing of sour cream and mayo, mixed with crispy bacon, cheddar cheese, and green onions. It’s garnished with extra toppings for a delicious, indulgent side dish perfect for any gathering.

Loaded Baked Potato Salad

Ingredients

  • 3 lbs Gold or Red Potatoes

  • 1 C Cooked Bacon, Chopped (5-7 slices)

  • 1 ½ C Shredded Cheddar Cheese

  • 1 C Sour Cream

  • ½ C Hellman’s Mayo

  • 1-2 T SnS SPG or

  • 1-2 T SnS SmokeHouse

  • 3 Green Onions, Chopped

Directions

  1. Wash & cut potatoes into uniform bite size pieces. Boil in salted water until fork tender. Drain & cool.

  2. While potatoes are cooking, mix remaining ingredients to allow time for flavors to meld. Mix all together when potatoes are cool. Refrigerate until ready to serve.
