This easy Sheet Pan Greek Chicken is packed with fresh, flavorful ingredients! Juicy chicken is seasoned with SnS Greek Seasoning and roasted alongside tender zucchini and sweet cherry tomatoes, then finished with creamy feta cheese. A simple, delicious one-pan meal perfect for busy weeknights!

Sheet Pan Greek Chicken

Ingredients

  • 1 Lb boneless, skinless chicken breasts cut into 1-inch cubes

  • 1 Β½ Tbsp SnS Greek Seasoning

  • 1 tsp Salt (if desired as the Greek Seasoning is salt free)

  • 2 Tbsp Olive Oil (divided)

  • 1 Medium Zucchini (sliced into Β½-inch rounds)

  • 1 Cup Cherry or Grape Tomatoes

  • Β½ Cup Crumbled Feta Cheese

Directions

  1. Preheat your oven to 400Β°

  2. Line a large, rimmed baking sheet with parchment paper or aluminum foil.

  3. Place cubed chicken breasts into a medium mixing bowl. Drizzle with 1 Tbsp of olive oil, when sprinkle with 1 Β½ Tbsp of SnS Greek Seasoning and Β½ tsp salt (if you want salt). Toss thoroughly until the chicken is evenly coated.

  4. In a separate bowl, toss the zucchini round and cherry tomatoes with the remaining Tbsp of olive oil and the remaining Β½ tsp of salt (if salt is desired)

  5. Spread seasoned chicken cubes, zucchini, and tomatoes across the prepared baking sheet in a flat layer. Ensure the ingredients are spread out so they roast instead of steam.

  6. Bake in oven at 400Β° for 15 minutes or until chicken registers an internal temperature of 165Β°F and the tomatoes begin o blister and burst.

  7. Remove the sheet pan from the oven. Immediately sprinkle the crumbled feta cheese over the hot chicken and vegetables so it softens slightly before serving.
